Indian Chicken Curry

This recipe is a lovely combination of flavors. Give it a try! I didn't have cinnamon sticks or red chillies or a ginger knob, so I used the powdered forms. It still turned out great. This works well over rice.

Wheat Cheese Beer Bread

I love this bread recipe! It rises well, and is not too dense, or too crumbly. The cheese is optional. I leave it out sometimes and it still tastes great. I use Amberbock for the beer (it's fairly cheap and has a good flavor), and sometimes I throw in some oats or make all wheat. so far, it always turns out good.

Apple Pie Cheesecake

This is a combination of my favorite cheesecake recipe and my own apple pie recipe.

Crust:
1/2 cup butter
1/3 cup sugar
1 cup flour

Filling:
1 package(8oz.) cream cheese
1/4 cup sugar
1 egg
1 teaspoon vanilla

Topping:
about 3 apples
1/4 cup sugar
1 cup chopped walnuts
1/4 cup flour
1 teaspoon cinnamon
1/4 cup butter (softened)
1/4 cup oats

Directions:

Crust: Cream butter and sugar. Add flour and mix well. Press into the bottom and half way up sides of a 9" springform pan.

Filling: Mix cream cheese and sugar. Add eggs and vanilla and blend well. Spoon over crust.

Topping: Core, peel, and thinly slice apples. Combine sugar, walnuts, flour cinnamon, oats, and butter. arrange apples over the filling. Sprinkle walnut mixture over the top.

Bake at 450 degrees F. for 10 minutes, reduce heat to 400 degrees F. and bake for 25 minutes. Coll to room temperature (3 to 4 hours) and then refrigerate until serving.

Spaghetti Pie

I got this out of a Light recipes cooking magazine, and it has become one of our favorites.

Ingredients:
1/3 box of spaghetti noodles
1 egg
1/4 cup Parmesan cheese
1 (8 oz.) container of cottage cheese
1/2 pound of ground meat
2 tablespoons garlic (minced)
1 bell pepper (sliced)
1/2 onion (sliced)
1 jar of spaghetti sauce


Cook spaghetti noodles, let cool, and pour into a mixing bowl along with beaten egg and Parmesan cheese. Stir together and pour into a deep pie dish or 2 qt. casserole dish. Cover with cottage cheese.
Cook meat with garlic, onions, and bell pepper. Add salt and pepper to taste. Allow onions and peppers to soften. In a large mixing bowl, combine meat mixture and spaghetti sauce. Pour in dish over cottage cheese. Finally sprinkle mozzarella cheese over the top, and bake on 350 for about 30 min.

Tilapia fillets with green onions

so, I've made tilapia before, but I wasn't really very fond of it UNTIL THE LAST TIME. I thought I would share my discovery. It's good stuff!...and pretty simple too. I served this with fried red potatoes and salad. (This recipe serves about 3 people)

Ingredients:
5 tilapia fillets
3 or 4 tablespoons of butter (not oil)
2 green onions
2 tablespoons minced garlic (not powder)
enough flour to coat
2 tablespoons greek seasoning (I used Cavender's, but you can use any favorite spices)

Method:

heat large skillet to medium heat. add half of the butter and let it melt. Add chopped green onions and garlic. While onions are getting tender, mix flour and seasoning together in a bowl. Then, rub mixture onto both sides of partially thawed tilapia fillets (completely thawed fillets will fall apart). Add tilapia to hot skillet, making sure to add enough butter to keep from sticking (leave onions and garlic in skillet). Fry fillets for about 3 minutes on each side, being careful not to let them fall apart (cooking time may vary). Tilapia is cooked when completely white throughout.
Note:
I had to continually add more butter to the pan to avoid sticking.
